Kiyomitsu 240mm Gyuto

I am a great fan of Shigefusa knives, especially their Kitaeji model, but I am myself, to tell you the truth, too lazy to look after a pure carbon steel knife everyday use, so I swear by Heiji INOX when it comes to daily cooking, and keep my Shigefusa Kitaejis to fish related special occasions (i.e. Deba, Yanagi-ba, and Usuba for "katsura-muking" the daikon!(^^))

I am sure there are ma~~~~~~~~~~~~~ny people who share my laziness, but at the same time wish to use as beautiful knife as Shigefusa Kitaeji daily. So I have always been looking for a stainless substitute of Shigefusa Kitaeji.

But as you all know, Shigefusa boast their crazy high standard for all aspect, sugata (overall balance of the blade shape), togi (sharpening/polishing), the handle/saya, the box, everything is perfect, so it is very difficult to find anything that can be considered as good....

Now, this Kiyomitsu series, I think it's ba~~~~sically as good, very very high in overall quality. Made in Tosa, Kouchi, 73 layer hand folded Nickel Damascus stainless jigane (sandwiching mild steel) + Molybdenum Vanadium high carbon stainless hagane (core steel), HRC 63. The polish is of course not like Shigefusa using natural stones, but as you can see, it is beau~~~~~tifully done. The handle is highest quality octagonal rosewood with ox horn ferrule!

The mei (brand mark) Kiyomitsu is derived from Kashu Kiyomitsu, a very very famous Katana worn by Shinsen-gumi's Okita Souji (1844~1868.)
